How the Strike Water Calculator works

Strike water is the hot water you add to crushed grain to hit a target mash temperature. Because the cool grain absorbs heat, the water must start hotter than the mash target. This calculator uses Palmer's strike-temperature formula.

Enter grain weight, grain temperature, your mash ratio (quarts per pound), and the target mash temperature to get the strike water temperature and total volume in quarts, gallons, and litres.

Frequently asked questions

What is the strike water formula?
Strike temp = (0.2 / ratio) × (target − grain temp) + target, where ratio is quarts of water per pound of grain.
What mash ratio should I use?
A ratio of 1.25–1.5 quarts per pound (about 2.6–3.1 L/kg) is typical for single-infusion mashes.
